ถั่วแระ ถั่วพระเหลือง ถั่วแม่ตาย (ภาคกลาง), มะถั่วเน่า ถั่วเน่า ถั่วหนัง (ภาคเหนือ), เถ๊าะหน่อ (กะเหรี่ยงเชียงใหม่), ตบยั่ง (เมี่ยน), อาทรึ่ม (ปะหล่อง), โชยุ (ญี่ปุ่น), โซยาบีน (อังกฤษ), อึ่งตั่วเต่า เฮ็กตั่วเต่า (จีน-แต้จิ๋ว) เป็นต้น และถั่วเหลืองได้รับการขนานนามว่าเป็น "ราชาแห่งถั่ว" อีกด้วย
Glycine max (L.) Merr.
จัดอยู่ในวงศ์ถั่ว (FABACEAE หรือ LEGUMINOSAE) และอยู่ในวงศ์ย่อยถั่ว FABOIDEAE (PAPILIONOIDEAE หรือ PAPILIONACEAE)
ต้นถั่วเหลือง
ลำต้นตั้งตรง ลักษณะเป็นพุ่ม แตกแขนงค่อนข้างมาก มีความสูงประมาณ 30-150 เซนติเมตร โดยความสูงจะขึ้นอยู่กับความสมบูรณ์ของดิน ความชื้น และฤดูที่เพาะปลูก ลำต้นมีขนปกคลุมอยู่ทั่วไป ยกเว้นในส่วนของใบเลี้ยงและกลีบดอก และต้นถั่วเหลืองยังแบ่งออกเป็น 2 ประเภท ได้แก่ ชนิดทอดยอดและชนิดไม่ทอดยอด เมื่อเมล็ดแก่ฝักจะแห้งและต้นจะตายตามไปด้วย จึงเป็นที่มาของชื่อ "ถั่วแม่ตาย"
รากถั่วเหลือง
มีระบบเป็นรากแก้ว หากเป็นดินร่วนอาจหยั่งรากลึกถึง 0.5-1 เมตร แต่โดยทั่วไปแล้วระบบรากจะอยู่ในความลึกประมาณ 30-45 เซนติเมตร ซึ่งประกอบไปด้วยรากแก้วที่เจริญมาจากรากแรกของต้น และมีรากแขนงที่เจริญมาจากรากแก้ว ส่วนบริเวณปมรากนั้นเกิดจากแบคทีเรียไรโซเบียมที่เข้าไปอาศัยอยู่
ใบถั่วเหลือง
ระยะต้นอ่อนจะมีใบเลี้ยง ใบจริงคู่แรกเป็นใบเดี่ยว โดยใบจริงที่เกิดขึ้นต่อมาจะเป็นใบประกอบแบบ 3 ใบย่อย คือ มีใบย่อยด้านปลาย 1 ใบและมีใบย่อยด้านข้างอีก 2 ใบ ลักษณะของใบมีรูปร่างหลายแบบ เช่น รูปไข่จนถึงเรียวยาว ส่วนที่โคนของก้านใบประกอบจะมีหูใบอยู่ 2 อัน และส่วนที่โคนของก้านใบย่อยมีหูใบย่อยอยู่ 1 อัน ที่ใบมีขนสีน้ำตาลหรือเทาปกคลุมอยู่ทั่วไป
ดอกถั่วเหลือง
ออกดอกเป็นช่อ มีช่อดอกเป็นแบบกระจะ ดอกมีสีขาวหรือสีม่วง โดยสีขาวเป็นลักษณะด้อย เมื่อดอกบานเต็มที่จะมีขนาดประมาณ 3-8 มิลลิเมตร โดยดอกจะเกิดตามมุมของก้านใบหรือตามยอดของลำต้น ในหนึ่งช่อดอกจะมีดอกตั้งแต่ 3-15 ดอก โดยช่อดอกที่เกิดบนยอดของลำต้น มักจะมีจำนวนดอกในช่อมากกว่าช่อดอกที่เกิดตามมุมใบ และในส่วนของดอก ประกอบไปด้วยก้านช่อดอกและก้านดอกย่อย กลีบเลี้ยงที่อยู่นอกสุดมีสีเขียว สั้น มีอยู่ 2 กลีบและมีขนปกคลุม ถัดมาคือกลีบรองดอกที่อยู่ในชั้นถัดจากกลีบเลี้ยง ฐานติดกันมีแฉก 5 แฉก ถัดมาคือส่วนของกลีบดอก มี 5 กลีบ คือ กลีบใหญ่ 1 กลีบ กลีบกลางด้านข้าง 2 กลีบ และกลีบเล็ก 2 กลีบ[
ฝักถั่วเหลือง
ออกฝักเป็นกลุ่ม กลุ่มละประมาณ 2-10 ฝัก ที่ฝักมีขนสีเทาหรือสีน้ำตาลปกคลุมอยู่ทั่วฝัก ฝักมีความยาวประมาณ 2-7 เซนติเมตร ในแต่ละฝักจะมีเมล็ดอยู่ประมาณ 1-5 เมล็ด แต่ส่วนใหญ่แล้วจะมีอยู่ 2-3 เมล็ด ฝักอ่อนมีสีเขียว เมื่อสุกแล้วจะเปลี่ยนเป็นสีน้ำตาล และเมื่อฝักแตกออกจะทำให้เมล็ดร่วงออกมา
เมล็ดถั่วเหลือง
เมล็ดอาจมีสีเหลือง สีเขียว สีน้ำตาล หรือสีดำก็ได้ โดยเมล็ดจะมีขนาดและรูปร่างต่างกัน ลักษณะของเมล็ดมีตั้งแต่กลมรีจนถึงยาว หากเป็นเมล็ดขนาดเล็กจำนวน 100 เมล็ด จะมีน้ำหนักประมาณ 2 กรัม แต่ถ้าหากเป็นเมล็ดใหญ่อาจมีน้ำหนักมากกว่า 40 กรัม แต่โดยทั่วไปแล้วจะมีน้ำหนักอยู่ที่ประมาณ 12-20 กรัม
มีถิ่นกำเนิดในประเทศจีนทางตอนกลางหรือทางเหนือ
1. ถั่วเหลืองเป็นอาหารที่มีคุณค่าทางโภชนาการสูงและหลากหลาย เพราะอุดมไปด้วยโปรตีน คาร์โบไฮเดรต กรดอะมิโน มีไขมันชนิดดีสูง มีเส้นใยอาหารสูง มีวิตามินและเกลือแร่สูง และยังเป็นอาหารที่หาได้ง่าย ราคาไม่แพง การเก็บรักษาก็ง่าย และผู้ผลิตยังเติมสารอาหารที่มีประโยชน์อื่น ๆ ลงไปอีกด้วย โดยเฉพาะในผลิตภัณฑ์นมถั่วเหลืองสำเร็จรูป
2. การบริโภคนมถั่วเหลืองเป็นประจำยังมีประโยชน์ต่อรูปลักษณ์ภายนอกอีกด้วย เช่น ช่วยทำให้ผิวพรรณสดใส เปล่งปลั่ง ดูมีน้ำมีนวล เป็นต้น
3. การรับประทานถั่วเหลืองเป็นประจำจะช่วยต่อต้านอนุมูลอิสระในร่างกาย ช่วยป้องกันโรคหลอดเลือดแข็งตัว โรคความดันโลหิตสูง โรคหัวใจ และโรคเบาหวาน
4. ช่วยบำรุงประสาทและสมอง ช่วยเพิ่มความจำ เนื่องจากถั่วเหลืองอุดมไปด้วยวิตามินบีหลายชนิด
5. โปรตีนในถั่วเหลือง ถือเป็นโปรตีนที่มีคุณภาพดี มีโปรตีนสูงเทียบเท่ากับนมวัว (แต่มีแคลเซียมน้อยกว่า เพียง 1 ใน 5 ของนมวัวเท่านั้น) สามารถใช้ทดแทนโปรตีนจากเนื้อสัตว์ได้ เพราะมีกรดอะมิโนจำเป็นอยู่หลายชนิดในปริมาณที่สมดุลมากกว่าถั่วชนิดอื่น
6. ถั่วเหลืองมีไขมันสูง โดยมีน้ำมันอยู่ร้อยละ 12-20 น้ำมันจากถั่วเหลืองมีส่วนประกอบของไขมันไม่อิ่มตัวอยู่หลายชนิด ที่เป็นกรดไขมันจำเป็นต่อร่างกาย ซึ่งจำเป็นต่อการเจริญเติบโตของเด็กและทารก ช่วยเสริมสร้างความสมบูรณ์ให้แก่ผิวหนัง จึงเป็นน้ำมันที่ดีต่อสุขภาพ และยังมีวิตามินอีซึ่งเป็นวิตามินที่ละลายในไขมันอีกด้วย
7. นมถั่วเหลือง สามารถใช้เป็นอาหารเสริมได้ดี โดยเฉพาะอย่างยิ่งเด็กที่แพ้นมวัวและไม่สามารถดื่มนมมารดาได้ จึงสามารถดื่มนมถั่วเหลืองทดแทนได้
8. นมถั่วเหลือง มีสารไฟโตเอสโตรเจน (Phytoestrogen) ที่มีคุณสมบัติบางอย่างคล้ายกับฮอร์โมนเอสโตรเจนในเพศหญิง ช่วยทำให้ระบบเลือดดีขึ้น แล้วยังช่วยทำให้สิวลดน้อยลงอีกด้วย
9. การดื่มนมถั่วเหลืองอุ่น ๆ ก่อนนอนจะช่วยทำให้นอนหลับสบายยิ่งขึ้น เพราะในถั่วเหลืองนั้นมีกรดอะมิโน "ทริปโตเฟน" ที่จะช่วยเปลี่ยนให้เป็นฮอร์โมนเซโรโทนินซึ่งช่วยควบคุมการนอนหลับ จึงทำให้นอนหลับได้ดีขึ้น
10. ถั่วเหลืองเป็นอาหารเสริมที่มีประโยชน์อย่างมากสำหรับผู้ป่วยมะเร็งที่บริโภคอาหารได้น้อย หรือมีอาการแพ้นมวัว หรือคลื่นไส้อาเจียน หรือมีอาการเจ็บเวลากลืนอาหาร
11. สำหรับผู้ที่ท้องเสียหรือเพิ่งฟื้นจากการเจ็บป่วย การดื่มนมวัวอาจทำให้ท้องเสียได้ แต่ถ้าหากดื่มนมถั่วเหลืองจะไม่มีปัญหาเรื่องการย่อยเหมือนนมวัว ทำให้ดูดซึมได้ดี ผู้ป่วยก็ฟื้นตัวเร็วยิ่งขึ้น
12. น้ำเต้าหู้ถือเป็นเครื่องดื่มเสริมความงามที่เหมาะแก่สุภาพสตรีเป็นอย่างมาก โดยส่วนใหญ่ผู้หญิงมักมีอาการโลหิตจาง ประสิทธิภาพการปรับความสมดุลในเลือดของน้ำเต้าหู้ถือว่าอยู่ในระดับที่ดีมาก โดยเฉพาะสุภาพสตรีวัยกลางคนและวัยชราที่ดื่มน้ำเต้าหู้อยู่เป็นประจำ จะช่วยปรับการขับของเหลวภายในร่างกาย ชะลอความแก่ ผลการวิจัยพบว่า ไอโซเฟลโวนีส โปรตีน และเลซิตินที่อยู่ในถั่วเหลืองช่วยป้องกันการเกิดโรคมะเร็งมดลูก มะเร็งเต้านม นอกจากนี้ สารอาหารบางชนิดที่อยู่ในน้ำเต้าหู้ยังช่วยกระตุ้นให้เกิดการสร้างเซลล์ใหม่ทดแทนเซลล์เก่า ทำให้ไขมันใต้ผิวหนังไม่จับตัวกันเป็นก้อน จึงช่วยเสริมสร้างความงามให้แก่เรือนร่าง หากรับประทานก่อนมื้ออาหารพร้อม ๆ กับอาหารที่มีกากไขมันสูง จะทำให้รู้สึกอิ่มเร็วขึ้น
13. สารอาหารบางชนิดที่อยู่ในน้ำเต้าหู้สามารถช่วยกระตุ้นการสร้างเซลล์ใหม่เพื่อทดแทนเซลล์เก่า ทำให้ไขมันใต้ผิวหนังไม่จับตัวกันเป็นก้อน จึงช่วยเสริมสร้างความงามให้กับเรือนร่างได้
14. การรับประทานถั่วเหลืองก่อนมื้ออาหารพร้อมกับอาหารที่มีกากไขมันสูง จะช่วยทำให้รู้สึกอิ่มได้เร็วขึ้น มีผลทำให้รับประทานอาหารได้น้อยลง จึงช่วยควบคุมน้ำหนักไปด้วยในตัว
15. เราสามารถเลือกรับโอเมก้า 3 ที่ได้จากถั่วเหลืองแทนการรับประทานจากปลาได้เลย แถมยังปลอดภัยต่อสารปนเปื้อนที่มักพบในปลาบางชนิดอีกด้วย
16. ถั่วเหลืองมีโปรตีนสูง จึงช่วยเสริมสร้างเส้นผมใหม่ได้
17. ประโยชน์ถั่วเหลือง หลัก ๆ แล้วคงหนีไม่พ้นการใช้เป็นอาหาร โดยเมล็ดที่ยังไม่แก่อาจนำมาต้มรับประทานหรือที่เรียกว่า "ถั่วแระ" หรือบางสายพันธุ์มีเมล็ดโตก็นำมาใช้ปรุงรับประทานเป็นถั่วเหลืองฝักสด หรือนำไปแปรรูปบรรจุกระป๋อง
18. ส่วนเมล็ดแก่ก็อาจนำมาใช้ทำเป็น "ถั่วงอก" เพื่อใช้รับประทานผัก หรืออาจนำมาใช้ทำเป็นเต้าเจี้ยว ซีอิ๊ว ซอส เต้าหู้ เต้าฮวย ขนมเทียน ขนมหม้อแกงถั่ว ถั่วงอกหัวโต แป้งถั่วเหลือง นมถั่วเหลือง น้ํามันถั่วเหลือง ทำเป็นเนื้อเทียม สำหรับใช้เป็นอาหารมังสวิรัติ หรือใช้ในกลุ่มผู้บริโภคที่ไม่รับประทานเนื้อสัตว์ หรือจะนำมาใช้ปรุงอาหารโดยตรง เช่น การนำมาต้มกับหมูก็ได้ หรือนำมาทำน้ำพริกเผาถั่วเหลือง นำไปคั่วหรืออบแล้วบดเป็นผงชา กาแฟ เป็นต้น
19. เมล็ดสามารถเก็บไว้หมักทำถั่วเน่าเพื่อเก็บไว้ใช้ปรุงรสชาติของอาหารประเภทต่าง ๆ เช่น แกง น้ำพริก เป็นต้น
20. แป้งถั่วเหลือง นำมาใช้ผสมหรือปรุงอาหารได้หลายอย่าง เช่น การนำมาทำเป็นขนมต่าง ๆ อาหารสำหรับทารก ฯลฯ
21. ประโยชน์ของน้ำมันถั่วเหลือง สามารถนำมาใช้ในการปรุงอาหาร ผัดอาหาร ทำมาการีน ทำเป็นน้ำสลัด ฯลฯ
22. น้ำต้มเมล็ดถั่วเหลือง สามารถนำมาใช้สระผมได้ (ปะหล่อง)
23. ประโยชน์ของกากถั่วเหลือง กากที่เหลือจากการสกัดทำเป็นน้ำมันสามารถนำมาใช้ทำเป็นปุ๋ย หรือใช้เป็นอาหารเลี้ยงสัตว์ หรือใช้รับประทานแทนเนื้อสัตว์ และกากเกลือจากการทำน้ำนมถั่วเหลืองก็ยังนำไปทำอาหารได้อีกด้วย เช่น กรอบเค็ม หรือใช้เลี้ยงสัตว์ ทำปุ๋ยหมักก็ได้
24. เศษซากที่เหลือจากการเก็บเกี่ยวยังสามารถนำมาใช้เป็นอาหารสัตว์จำพวกเคี้ยวเอื้อง เช่น วัว ควาย แพะ แกะ ได้เป็นอย่างดี หรือนำมาใช้ทำเป็นปุ๋ยหมักก็ได้
25. ถั่วเหลืองเป็นพืชบำรุงดิน เมื่อไถกลบถั่วเหลืองลงไปในดินก่อนที่ถั่วเหลืองจะแก่ ก็จะเป็นปุ๋ยพืชสดที่ช่วยบำรุงดินได้เป็นอย่างดี ทำให้ดินมีความอุดมสมบูรณ์และมีคุณสมบัติที่ดี ส่วนรากของถั่วเหลืองที่มีปมซึ่งเป็นที่อยู่อาศัยของแบคทีเรียไรโซเบียม แบคทีเรียชนิดนี้จะช่วยดูดตรึงไนโตรเจนให้มาอยู่ในรูปพืช สามารถใช้เป็นปุ๋ยได้ เมื่อเก็บถั่วแล้วรากและปมก็จะขาดตกค้างอยู่ในดิน แล้วกลายเป็นปุ๋ยของพืชต่อไป
26. ถั่วเหลืองมีการนำมาใช้ในอุตสาหกรรมต่าง ๆ อย่างแพร่หลาย ไม่ว่าจะเป็นอุตสาหกรรมอาหาร เช่น เนื้อเทียม โปรตีนเกษตร หรือโปรตีนสกัดจากถั่วเหลือง โปรตีนถั่วเหลือง โปรตีนถั่วเหลืองเข้มข้น แป้งถั่วเหลือง น้ำมันถั่วเหลือง เต้าหู้ เต้าหู้ยี้ เต้าเจี้ยว เต้าเจี้ยวญี่ปุ่น ซอสถั่วเหลือง ซีอิ๊ว ถั่วเน่า นัตโตะ เทมเป้ อาหารเสริมเลซิติน ฯลฯ หรือใช้ในอุตสาหกรรมสัตว์ สบู่ เครื่องสำอาง ผ้า กระดาษ เส้นใย ฉนวนไฟฟ้า หมึกพิมพ์ ใช้ผลิตกาว สี เบียร์ วิตามินและยาต่าง ๆ ทำปุ๋ย หรือใช้เป็นส่วนผสมของยาฆ่าแมลง ฯลฯ โดยอาจเป็นทั้งส่วนประกอบสำคัญในผลิตภัณฑ์หรือเป็นตัวช่วยทำให้ผลิตภัณฑ์นั้นมีคุณสมบัติที่ดีขึ้น
